Hiroki Tokubetsu Junmai unfiltered sake without heat sterilization

The brewery (Hiroki Shuzo Honten) was founded in 1804 – 1830. Mild textured, riverbed water from Aga river is used for sake. The president is the brew master who always tries to make a new sake, and popular among young generation brewers. 
Winner of the GOLD award three times in a row for the Junmai division in Sake Competition from 2016 to 2018. While it has a light and clean taste, you can taste the texture and acidity of the core rice, and the crisp flavor is perfect to accompany subtle dishes with flavors that don’t stand out. This sake is the true representative of sake that you won’t tire of. It is perfectly compatible with Japanese food and it is a particularly suitable pairing for wild vegetable tempura and white fish sashimi. The brewery’s policy is not narrow‐margin high‐turnover, and so its production is restricted. It can be difficult to obtain even in its local area of Fukushima. Once again, please make sure you keep it in the refrigerator.
